This project involved a sensitive reconfiguration of the heritage-listed Heritage Wine Bar to enhance functionality while preserving its historic character. Referred by Brookfield Properties, Hoskins partnered with Design Theory under a design and construct model to deliver a new private dining room for up to 40 guests, alongside upgrades to the wine store and kitchen.
Working within a live hospitality environment, we developed flexible solutions such as removable walls and reused existing furniture to maximise value. Works were scheduled between 5am and 11am daily to minimise disruption, allowing the venue to remain operational with only one day of downtime. Lighting and services were reconfigured to suit the new layout, including independent circuits for the dining room.
The wine store component included grinding and polishing concrete floors to expose the original heritage finish, along with the design and construction of custom wine racking, matching furniture, and an integrated office space with display shelving. Behind the existing bar, a new show kitchen was constructed, featuring a new exhaust hood, upgraded mechanical extraction to the roof, and installation of cooking equipment. Bespoke steel shelving and cladding were installed throughout to complete the upgrade. This project exemplifies efficient delivery, adaptive solutions, and careful heritage integration within a complex, operational setting.
